"The Spice Kitchen," under the culinary leadership of Chef Michael, is an innovative culinary venture that seamlessly combines tradition and modernity. This pop-up style concept takes adventurous diners on an exhilarating gastronomic journey through the rich and diverse cuisines of the Far East while celebrating the broader culinary ecosystem.

At the heart of "The Spice Kitchen" lies a commitment to reimagining traditional dishes from the Far East with a contemporary twist. Chef Michael's expertise and creativity shine through as he skillfully leads his culinary team in blending authentic flavors, techniques, and ingredients with a modern sensibility. Each dish served is a harmonious symphony of taste and innovation, paying homage to the culinary heritage of the region while pushing the boundaries of what is possible in the kitchen.

Born to a Taiwanese-Chinese family, Chef Michael Chang is a third-generation chef whose grandfather opened central Tokyo’s first Taiwanese restaurant and whose father later enhanced its menu with recipes from Northern China.

In 2009, he helped open the first Japanese restaurant in Orange County that served different styles of ramen representing different prefectures in Japan.  This was followed by helping to develop a Japanese Kaiseki menu for Singapore Airlines’ first-class cabins and working with UCLA Dining to create and execute an authentic Chinese and Japanese menu for UCLA’s residential dining program.
